An unopened can of sweetened condensed milk is simmered in water for 4 hours to produce the best every caramel. Of course, there&#8217;s always a chance that the can will explode so we never got carnulo at home.</p>
<p>4 c. milk<br />
1/2 c. ground blanched almonds<br />
1 c. sugar<br />
2 one-inch cinnamon sticks</p>
<p>Pour half of the milk in a lagre saucepan with the sugar, almonds and cinnamon. Cook over low heat, stirring occasionally, until misture thickens and becomes golden. Add the remaining milk. Continue cooking about 2 hours or until mixture thickens. Cool. Refrigerate until serving time.</p>

<p>1 TBL butter<br />
1 c shelled pinon nuts<br />
4 c sugar</p>
<p>Melt butter in saucepan. Add sugar and stur until brown and liquefied. This will take about 10 minutes and you must stir constantly.</p>
<p>Add pinons and pour out on greased flat pan. Set to cool. When hardened, break into pieces.</p>

<p>6 medium Zucchini Squash<br />

1 Clove garlic, minced<br />
Oregano to taste<br />
1 TBL capers<br />
1/2 c. toasted slivered almonds<br />
4 TBL oil<br />
Whites of 2 hard cooked eggs</p>
<p>Wash squash and cut off ends but do not peel. Cook in boiling salted water about 5 minutes. Cut a lengthwise clice off one side of each. Scoop out pulp, leaving a strong shell. Chop pulp coasrsely.</p>
<p>Saute all the almonds in oil. Add garlic, onion and pepper. Continue to cook until the vegetables are limp. Remove from heat and add to pulp along with the diced tomato, oregano, capers, raisins and whites of eggs. Season to taste. Mix well.</p>
<p>Stuff shells and place in well greased baking pan. Dot with butter. Pour about 1/2 c. of water in pan and bake in a moderate oven about 20 minutes. Filling may be sprinkled with a little dry white wine before baking, if desired.</p>
